Cuando se habla de
la agroindustrias, se está observando con un enfoque de sistemas a la actividad
agraria que tiene que ver con la obtención de un determinado bien: De este
modo, una plata procesadora de pulpa de mango es una agroindustrias, al igual
que la empresa que los cultiva y cosecha.
La agroindustrias
es un conjunto de piezas en equilibrio, desde la fase de producción agrícola
propiamente dicha, pasando por las labores de tratamiento post-cosecha,
procesamiento y comercialización nacional e internacional, en el trayecto que
recorren los productos del campo hasta llegar al consumidor.
La agroindustrias
es compleja, pues existen muchas variables que influyen permanentemente en el
éxito de la empresa, desde el proceso productivo (pre-cosecha), pasando por la
cosecha, tratamiento post-cosecha, embalaje, transporte y almacenamiento
refrigerado o frigorífico y controles de calidad en diferentes etapas de la
distribución.
Agroindustrias es
concebir la empresa agraria como parte de un sistema: De este modo, cada uno de
los conformantes del sistema agroindustrial revisarán continuamente su papel
dentro de él.
Una forma común y
útil de clasificación de la agroindustria, es la siguiente:
•Productos con poco
valor agregado: bienes primarios, sin enlaces entre la producción y el consumo
final. Por ejemplo: trigo, soya y maíz.
•Productos con
algún valor agregado: bienes primarios que tienen algún enlace entre la
producción, el procesamiento y sus características de uso para el consumo
final. Por ejemplo: las frutas y los vegetales.
•Productos con alto
valor agregado: transformación de bienes primarios en productos semiprocesados
para el consumo final. Por ejemplo: aceites vegetales, carnes y harinas.
•Productos con muy
alto valor agregado: modificación de bienes primarios y bienes semiprocesados
en bienes listos para el consumo final. Por ejemplo: vinos, cigarros y
